My first #smoked #brisket of 2023 - and the first one I’m actually happy with. I added a water pan and I was more rigorous with the butcher paper. A quantum step in texture and flavor.
My next improvement is timing - I took it off the smoker at 10:30pm and only got to enjoy a couple slices. Until tomorrow...

@wfryer it tasted really good - it’s the first one I’ve been happy with. Brisket continues to be my largest challenge to get right, but this was a good one.
