The genre of YouTube food content I really dislike: when some American dude says ‘I’m ranking all the best fried chicken in the world’ and then it’s based on *him* cooking like, I dunno, hat yai fried chicken. And then saying meh not as good as southern fried chicken.

I don’t care if you’re the best chef in the world (which dudes like that aren’t), you’re not cooking hat yai fried chicken even half as well as any auntie in hat yai. It’s extremely delusional.

Also, fried chicken doesn’t have to be stack ranked: it’s all great.

Go watch some Asian people’s cooking channels instead.

Palin from Hot Thai Kitchen is from Hat Yai and I love how she’s always repping how it’s one of the best fried chickens (I agree)

I make it sometimes, and it makes me remember my happy memories of eating at random street vendors in Hat Yai

My favorite celebrity chef moment was when Gordon Ramsey did a ‘can I cook better than Singaporean and Malaysian aunties’ segment and there were so many shots of the aunties going ‘wtf is he going’

(I’m not saying that people can’t cook cultural foods, but I think you can’t claim to be an expert in cultural foods without doing the work. No one’s saying Fuschia Dunlop can’t talk about Sichuan food for example)

@skinnylatte no truer words than that last statement!

BTW: did you go to Hat Yai while in #portland? So good, I think I know what I'm doing for lunch today!

@ktneely it’s pretty good, but I also make it myself and prefer my version hehehe

@skinnylatte an aside, I appreciate fuschia Dunlop and I think when she was FIRST writing it was super new to the west and she’s put in the work. But now I think she should do the work of passing the mic to Chinese people to talk about their own food which I never see her do.

@zmagg the second part is also true

@skinnylatte I certainly don’t think you can do it being a cocky white man

@skinnylatte another good example here is Tim Anderson, who writes a bunch of cookbooks about Japanese food. He really does the work. His cookbooks really showcase his appreciation for Japanese food and people, the genuine respect he has for the many cultures of Japan, and a depth of knowledge that's impressive. All in a non-exoticizing, non-weeb way. @kavey reviewed his latest in detail, and it's a great analysis. kaveyeats.com/hokkaido-tim-and

@skinnylatte Not going to lie: reading this about the man whose shows can be summed up as "Top Chef throws a temper tantrum at (blank)" made me laugh.

@ND3JR

He got this in Thailand

And Malaysia

In Malaysia

@skinnylatte Those were fun to watch! He definitely got better treatment from the Malaysian cook that he would have given anyone if the roles were reversed.

@skinnylatte my favorite fried chicken I have personally tasted so far comes from bb.q (coincidentally, relatively easy to get to from where I live). I am always down for additional varieties; any friend chicken done well is going to be good regardless of style. <3

@skinnylatte do you have Asian cooking channels you’d recommend?

@winterknight1337

Korean: Maangchi, Korean Vegan

Thai: Hot Thai Kitchen, Marion's Kitchen

Singaporean: Spices n Pans

Vegan Malaysian: Kampung Vegan

Chinese: Chinese Cooking Demystified, Cook with Lau

I'm always quite dissatisfied by Asian recipes made by random YouTube food bros (except Kenji), it just very often skips steps and doesn't taste very good.

@skinnylatte awesome. I have some watching and note taking to do. Thank you so much!

@skinnylatte so much this. The weird obsession with “best”. It’s some weird creepy bullshit.

@skinnylatte Youtube dudes think they invented cooking sometimes. I want to see these dudes spend a week cooking three meals a day for a bunch of whiney, picky kids and see how their skill level meets that demand.

@skinnylatte Because his shtick is irritating after watching a few. Too much bro energy. He used to(?) seem pretty chill when he was just blogging and stuff years ago. YouTube, it’ll make ya cringe.

@skinnylatte it's interesting because I think this type of food video tends to fall into one of two categories. Either the guy (or guys) has underlying xenophobia/is really only interested in foods within his comfort zone, OR they are legitimately excited to try things they've never tried before, and expand their palate and knowledge. I like the 2nd category because it's fun watching their excitement when they try stuff for the first time, especially if it's food I know and love. The 1st category is boring and annoying.
