The genre of YouTube food content I really dislike: when some American dude says ‘I’m ranking all the best fried chicken in the world’ and then it’s based on *him* cooking like, I dunno, hat yai fried chicken. And then saying meh not as good as southern fried chicken.

I don’t care if you’re the best chef in the world (which dudes like that aren’t), you’re not cooking hat yai fried chicken even half as well as any auntie in hat yai. It’s extremely delusional.

Also, fried chicken doesn’t have to be stack ranked: it’s all great.

I make it sometimes, and it makes me remember my happy memories of eating at random street vendors in Hat Yai

My favorite celebrity chef moment was when Gordon Ramsey did a ‘can I cook better than Singaporean and Malaysian aunties’ segment and there were so many shots of the aunties going ‘wtf is he going’

(I’m not saying that people can’t cook cultural foods, but I think you can’t claim to be an expert in cultural foods without doing the work. No one’s saying Fuschia Dunlop can’t talk about Sichuan food for example)

@skinnylatte an aside, I appreciate fuschia Dunlop and I think when she was FIRST writing it was super new to the west and she’s put in the work. But now I think she should do the work of passing the mic to Chinese people to talk about their own food which I never see her do.

His cookbooks really showcase his appreciation for Japanese food and people, the genuine respect he has for the many cultures of Japan, and a depth of knowledge that's impressive. @skinnylatte Those were fun to watch! He definitely got better treatment from the Malaysian cook that he would have given anyone if the roles were reversed.

@skinnylatte my favorite fried chicken I have personally tasted so far comes from bb.q (coincidentally, relatively easy to get to from where I live). I am always down for additional varieties; any friend chicken done well is going to be good regardless of style. <3
