Just saw a picture of a fried dumpling and was consumed (ha) with a hyperfocal desire To Know All Of Dumplings and make them at home
But I'm still perfecting the previous #hyperfocus, spaghetti. And I've made recent great strides in a long term plan to become King of #Pizza (protip: heavy on the gluten, lighter on the cheese)
Fortunately it's a three day weekend so I can do it all! But I need to buckle down and watch 14 hours of youtube dumpling tutorials. Plus work on #GeometricAlgebra
Welp, this lady has not just the clearest #dumpling recipes, she has the clearest, best-organized #cooking videos period.

Definitely going to make these this weekend. Not sure my Market Basket has "oyster sauce" or "Chinese black vinegar".
Went to the Asian market and got black vinegar and oyster sauce. All is now in readiness for a first try at pan-fried dumplings tomorrow. Wish me luck!
OK, I'm actually pretty proud of this. There's definitely a few mutants and monsters in there, esp in the foreground.
Those are my first few dumplings *ever*! I got into the swing of it later.
Best indicator that I was doing it right is that the (homemade!) wrappers and filling came out exactly even.
I expect a few to kerplode in the pan, so I'm going to cook 6/ea and hope for 4/ea.
No kerplosions! All 18 that I cooked very delicious! And I still have 30 left!
Next time: Fry them in less oil and in a smaller pan. This pan cooked the center few while leaving the outer ones raw, so I had to cycle them through anyway. Might as well just use two smaller pans at that point.
@davidr Truly delightful. Thanks for the tip. A content warning should be used along the line of "Do not watch if hungry". Does anyone know of a good #vegan Chinese dumplings filling? #cooking #dumpling #chinesefood
@davidr This video is so good and thoughtful that I think it should be used as a basis for training how to make training videos. It is off topic, but the PRC gets a lot of bad press, and it is just cultural fresh air to see such positivity. Love the mention of how her grandmother said to mix the filling. These things are human touches that we need to hear. Perhaps food can unite the world?
@davidr Beautiful!! My son got very into making dumplings this past year. Lucky me. :)
@davidr hell yeah!! Nice work!
