Oh no!

You probably know this already, but just in case it's useful to you or others: You can make your own corn free baking powder! Baking powder is 3 ingredients that work together:

1) I make bubbles when I touch acid!
2) I make bubbles when I'm heated up!
3) I absorb moisture!

Regular baking powder uses baking soda for 1) cream of tartar for 2), and corn starch for 3). You can mix up your own by substituting arrowroot for 3)

Belated, I know, but thank you for sharing that with me! I tried it in some muffins and it works much better than the previous mixture I had used, which for some reason used salt where this one uses starch.

I didn't have any arrowroot so I substituted cassava and that worked.
