@serpentroots my top KL picks (I'm going to recommend stuff close to the city center. if you ever venture out of 'PJ' or the suburbs I've got a whole other list):
1. Shin Kee Beef Noodles near chinatown: best damned beef noodles. order 'yellow noodles and kway teow mix, beef ball and brisket mix, dry'
2. Bukit Bintang / Jalan Alor food street: super touristy but it has some hits for me. Nasi Lemak Bob and Wong Ah Wah grilled chicken wings
3. Burger Ramly: can't leave Malaysia without eating one. Just ask anyone at the hotel or any Malaysian friends or colleagues which Burger Ramly near you to go to. Or go to any you see in a map (they are like street food burgers). My standard order is the chicken double special cheese or whatever combination you get see with those words.
4. For various reasons, KL has the best Syrian food outside of the Middle East right now, especially food from Aleppo. I'm a fan of Halab, on Jalan Berangan.
5. KL has really good south Indian food. There's local south indian food in Brickfields (look up 'Chettinad food', it's very unique to SE Asia's local Indian community). I like Maya Mess for KL Indian Chettinad food. You can then compare it with Dindigul Thalappakatti, which is a famous biryani restaurant from South India that has a branch there. That style is biryani is entirely different from the style found in Indian restaurants in the west.

also interesting fusions like indian-malay, malay-chinese. heck, expand it to ho chi minh or bangkok or jakarta or surabaya and i will write you a list for every city. :)
