Check out this recipe for a southern Malaysian Malay sambal kicap, however I doubt 20 birds eye chillies is the right amount for anyone not from that part of the world (try 8 if you think you’re a spice head)
You probably can’t get Malay style soy sauce easily. Really any soy sauce should work, and maybe Thai Golden Boy sauce would work similarly. Or Indonesian ABC brand but make sure it says ‘asin’ (salty) not ‘manis’ (sweet). I’ve seen Thai and Indonesian stuff at many markets, but not often Malaysian ones
@skinnylatte I'll get some Tamin soy sauce next time I am near one of the Asian markets in China Town, and start with 8 chillies as advised. Any preference on the type of vinegar? Better if rice, or wine/cider is also ok?
@luigirenna Not sure Tamin brand soy sauce is available widely internationally (diff from tamari). See if you can find Thai golden boy sauce it should be closer than Chinese / Japanese soy sauce. White vinegar is best but in a pinch, any
