Don't ruin it trying to make protein pancakes. Those are for you. Give the kids that raw uncut puro.

There is is a difference between baking powder and baking soda?
I thought that the German term "Backpulver" (Back Pulver is literally translated baking powder) was baking soda , chemically been something carbonate*)

Baking powder is a mixture of a carbonate or bicarbonate. baking soda (Sodium bicarbonate) is a common ingredient of baking powder

So probably you don't need both for fluffy pancakes
Both makes it better.
Baking powder is:
1) Bubbles when I touch acid (baking soda)
2) Bubbles when I get hot (cream of tartar)
3) Anti caking agent.
The proportion of baking soda to baking powder is not ideal for the fluffiest pancakes, so boosting with more baking soda helps.
More baking soda also helps with maillard reaction (golden brown texture).

It's funny, in Europe pancakes are eaten not as fluffy, are much bigger, and need to be more flexible as they are either rolled or folded.
You can eat them both, with a sweet or salty filling
