Incredible video about fermented meats in SE Asia that I’m posting because I saw a silly comment about how there can’t possibly be fermented meats
Your food culture is not everybody’s food culture
@skinnylatte reminds me of one of the traditional ingredients in feijoada, which is a beef that’s dried in the sun, but it also partially ferments as part of that process.
It is very much a fermented meat flavor.
@skinnylatte I wonder if whoever said that ever ate salami or saucisson.
Edit: the video is really cool, thank you for sharing. Started to get hungry while watching it!
@skinnylatte Aren't salami and certain types of pepperoni and chorizo also fermented?
@skinnylatte Here is one from me — a video about fermented shark meat.
P.S. Nowadays, when we have Google and all these AI tools, who are these folks writing ignorant comments without fact-checking themselves first? https://youtu.be/QnjtnzyTNoQ
@ojars yes! I read about this. Looks like it keeps many indigenous people well fed.
@skinnylatte If there can be fermented tofu, there can definitely be fermented meats. Fermentation exists in the first place as a way of preserving foods.
(I like fermented tofu, but then again, I also like very strong cheeses.)
@skinnylatte Whaaaat come on! Fermented meats are a thing in so much of Europe too! So many sausages and cured meats are exactly that!
@aredridel it’s always people with the littlest knowledge of food and culture making proclamations of other people’s food and culture
@RedTechEngineer “ferment" is a bunch of processes; a lot of older cured meats are cured with specific bacteria to force out others.
@skinnylatte
I recently tried Nam Khao Tod - so good
